PSA: whisper breaking on fresh installs? pin PyAV

Lost an hour to this so you don't have to. A PyAV release at the end of September breaks faster-whisper with a `metadata_errors` error.

Fix: install with `--with "av<19"`. The subtitles and voice notes lessons have been updated with it now.
